INGREDIENTS:

  • 2 1/2 cups vegan white chocolate (roughly chopped)
  • 2 tbs coconut oil
  • 2/3 cup pistachio kernals (or macadamias)
  • 2/3 cup turkish delight (gelatine-free turkish delight - chopped)
  • 2/3 cup vegan marshmallows
  • 2/3 cup dried apricot (diced)
  • 2/3 cup coconut flaked
  • 1/2 cup glace cherries (halved)
  • 2/3 cup plain vanilla biscuits (slightly crushed - I used Arnotts Nice, you can use gluten-free if you prefer)
INSTRUCTIONS:
  1. Line a small brownie pan with baking paper.
  2. Melt the white chocolate and coconut oil in the microwave in short bursts (stirring in between bursts until just melted).
  3. Add the remaining ingredients and stir to combine. Pour evenly into the brownie tin and refridgerate for at least an hour before cutting.
