INGREDIENTS:

  • 4 firmly packed cups grated potato (about 6 peeled potatoes)
  • 1/4 cup vegan butter (melted - or olive oil)
  • 3 tsp gluten-free cornflour
  • 2 tsp salt
  • Antipasto Variation
  • 3-4 tbs jar marinated vegetables (finely chopped i.e: olives, sundried tomatoes, chagrilled capsicum)
  • Garlic & Herb Variation
  • 1 very small garlic clove (very finely chopped or crushed)
  • 3 tbs fresh parsley (or any other fresh herb, very finely chopped)
INSTRUCTIONS:
  1. Rinse potato under water to remove starch, thoroughly squeeze out any excess water. Combine the potato and all other ingredients in a bowl, stirring to combine.
  2. Heat up a waffle iron and ladle heaped spoonfuls into the iron (keep heaped, do not spread out). Press the waffle iron together to sandwich and cook the hash brown until golden and crispy (about 6-8 minutes).
