INGREDIENTS:

  • Crumble Filling
  • 3 cups firm ripe pears (peeled, core removed and 1cm diced - about 2 very large pears)
  • 1 1/2 cups plums (stone removed, 1cm diced - about 3 plums)
  • 1 whole orange (juiced)
  • 1/2 whole lemon (juiced)
  • Crumble Mix
  • 1 cup uncontaminated oats - for gluten-free
  • 1/2 cup oatmeal (oat flour)
  • small pinch mixed spice
  • 1 tsp vanilla extract
  • 1/2 cup flaked almonds
  • 1/4 cup butter (softened, can substitute for vegan butter)
  • 1/4 cup raw sugar (any unrefined raw sugar you like, I used turbinado)
INSTRUCTIONS:
  1. Toss pears, plums and juices together in a bowl and leave to sit in the fridge for about 30-40 minutes, giving the mix a stir at about 15 minutes (so the fruit is all mixed with the acidic citrus juices to release their natural sugars)
  2. Preheat an oven to 180C and get a small oven-pie dish ready (about 15cm x 20cm)
  3. Mix all the crumble ingredients together until you can crumble the mix into chunks.
  4. Drain the fruit of any excess juices and place in a pie dish. Top with the crumble and bake for about 40-45 minutes or until the top is a dark golden brown and crispy.
  5. Serve with coconut cream or icecream.
