Bean Chilli with Gaucamole & Zesty Lime Sour Cream

An awesome vegetarian and vegan bean chilli with a coriander-guacamole and zesty lime sour cream (with a kick of citric acid - available in the supermarket baking section) . Add more chilli if you like the heat, if not - opt to remove the fresh chilli. I used a chipotle chilli powder for this dish, it adds an a sweet-smokey chilli flavour. You can get different chilli powders online, there is a whole world out there: kashmiri, arbol, habanero, ancho, pasilla etc.


  • Bean Chilli
  • 2 tbs olive oil
  • 1 medium brown onion (finely chopped)
  • 2 medium garlic cloves (crushed)
  • 2 tsp chilli powder
  • 1/2 tsp ground cumin
  • 1 small chilli (finely diced)
  • 1 large red capsicum (diced)
  • 1 tsp Brown sugar
  • 400 g cooked beans (or used canned beans - any beans are fine)
  • 400 g chopped tomatoes (fresh or canned)
  • 2 tbs tomato paste
  • 250 ml vegetable stock
  • Guacamole
  • 2 small Avocados (diced, or 1 large)
  • small handful coriander leaves (roughly chopped)
  • 1 small tomato (deseeded and diced)
  • salt and pepper (to taste)
  • Lime Sour Cream
  • 1 cup vegan (soy) sour cream
  • 2 tbs fresh lime juice
  • 1 tsp lime zest (finely grated)
  • salt and pepper (to taste)
  • 1/8 tsp citric acid (optional)
  1. Heat oil in a saucepan over a medium heat then add in brown onion, garlic, chilli powder and ground cumin and stir until spices have browned slightly and the onion has softened.
  2. Next add in the fresh chilli, capsicum and stir until softened.
  3. Next add in the brown sugar, beans, tomatoes, tomato paste and vegetable stock and cook over a slow boil (for about 15 minutes - stirring occasionally) until mixture has thickened and most of the moisture has cooked out. Take off the heat to cool Serve bean chilli with Guacamole, Zesty Lime Sour Cream (see below) and/or with corn chips or wraps.
