INGREDIENTS:

  • Mock Tuna
  • 2/3 cup canned chickpeas (drained)
  • 1/2 cup raw almonds (soaked in hot water for a few hours to soften)
  • 1/2 cup sunflower seeds (soaked in hot water for a few hours to soften)
  • 1/3 cup celery (minced)
  • 2 tbs fresh dill (optional)
  • 1 tbs dill pickle (minced)
  • 4 tbs fresh lemon juice
  • 2 tbs thick vegan mayonnaise
  • 1/2 tsp dried oregano
  • 1 1/2 tsp djion mustard
  • 2 tbs red onion (minced)
  • dash of soy sauce and pepper to taste
  • Additional ingredients
  • 4 medium sandwich bread rolls
  • fresh lettuce leaves
  • fresh tomato slices (sprinkled with onion salt - optional)
INSTRUCTIONS:
  1. To make the tuna, place all ingredients in a blender and pulse until combined and a little chunky.
  2. Lightly toast 4 split, bread buns and top with tuna, lettuce and tomato.
