3firmly packed cupsgrated zucchini(pressed with paper towel to remove all moisture)
1cupbroccoli florets(finely chopped)
2mediumspring onions(finely chopped)
1/2cupsweet chilli and ginger sauce
salt and pepper to taste
olive oil, for frying
Place all ingredients in a bowl and stir until the mixture just comes together. Season well with salt and pepper.
Heat olive oil on a non-stick frypan and place a few heaped, flattened, tablespoons of the fritter mix, cooking until the edges are starting to brown on the underside. Flip over and cook for a few minutes more.
