INGREDIENTS:

  • 3 firmly packed cups grated zucchini (pressed with paper towel to remove all moisture)
  • 1 cup broccoli florets (finely chopped)
  • 2 medium spring onions (finely chopped)
  • 1/2 cup sweet chilli and ginger sauce
  • 3/4-1 cup chickpea flour
  • salt and pepper to taste
  • olive oil, for frying
INSTRUCTIONS:
  1. Place all ingredients in a bowl and stir until the mixture just comes together. Season well with salt and pepper.
  2. Heat olive oil on a non-stick frypan and place a few heaped, flattened, tablespoons of the fritter mix, cooking until the edges are starting to brown on the underside. Flip over and cook for a few minutes more.
  3. Serve warm on their own, or with chilli sauce.
