These cookies are super-easy to make. They take less 5 minutes to mix together and 10 minutes to cook.


  • Cookie
  • 1 cup natural smooth peanut butter (no added salt)
  • 2/3 cup vegan vanilla protein powder (I use Vital Greens pea protein isolate, which is sweetened)
  • 1/3 cup rice malt syrup (adjust for sweetness)
  • Topping
  • 1 tbs maple syrup
  • 2 tbs cacao butter
  • 1 tbs smooth peanut butter
  • 1/2 tsp vanilla extract
  • few tbs unsalted crushed peanuts (for rolling)
  1. Preheat an oven to 170C (150C fan forced) and line large cookie tray with baking paper.
  2. Mix all the Cookie ingredients together (dough will be soft -add a touch of water if necessary). Take a heaped teaspoon of the dough and lightly roll between your palms into a ball, then flatten slightly with a fork. Space cookies about 1cm apart on the baking tray.
  3. Bake cookies for approximately 10-12 minutes. Cookies will be soft out of the oven, but allow to cool completely on the trays. When cooled, drizzle cookies with the Topping and chopped peanuts (if desired).
  1. Melt all Topping ingredients (except the peanuts) in microwave bursts until smooth. Refridgerate until thickened slightly. When cooled slightly (and thickened) drizzle over cookies then sprinkle with unsalted crushed peanuts.
