you can make the strawberry sauce and the vanilla cashew cream the day before.

INGREDIENTS:

  • Shake
  • 2 1/2 cups fresh strawberries (hulled)
  • 2 1/2 cups non-dairy milk (I use unsweetened almond and coconut milk)
  • 2 large scoops thick coconut cream or non-dairy icecream
  • Strawberry-Sauce
  • 1/2 cup fresh strawberries (hulled and finely chopped)
  • 2 tbs maple syrup
  • Whipped-Vanilla-Cashew-Cream
  • 1/2 cup raw cashews (soaked for 3 hours, then drained and rinsed)
  • 2 tbs maple syrup
  • 1/2 cup light coconut cream
  • 1 tbs lemon juice
  • 2 tsps vanilla extract, vanilla bean powder or vanilla bean paste
INSTRUCTIONS:
Shake
  1. Blend all the Shake ingredients in a high powered blender until smooth and thick, pour into large milkshake glasses.
Whipped-Vanilla-Cashew-Cream
  1. Blend all ingredients in a high powdered blender until smooth and creamy. Refridgerate to firm slightly.
Strawberry-Sauce
  1. Blitz strawberries and maple syrup in a small food processor until completely smooth.
Assembly
  1. Top thickshakes with a bit of the vanilla cashew cream (you can whip it a bit when its firm from the fridge, so it becomes lighter). Drizzle over the strawberry sauce. Enjoy
