INGREDIENTS:

  • 1 1/3 cup puffed rice (eg: puffed quinoa, puffed amaranth)
  • 2/3 cup other puffed grains (eg: puffed quinoa, puffed amaranth)
  • 1/2 cup desiccated coconut
  • 1/4 cup cacao nibs (optional)
  • 1/3 cup maple syrup (or rice malt syrup)
  • 3 tbs raw cacao powder
  • 1/2 cup coconut oil
INSTRUCTIONS:
  1. Mix the puffed grains, desiccated coconut and cacao nibs (if using), stirring to combine.
  2. In a small saucepan melt the maple syrup, raw cacao powder and coconut oil over a low heat and stir until the powder has dissolved (I put 1 tbs of chocolate protein powder in at this stage sometimes).
  3. Pour the melted mixture into the puffed grains and stir to combine. Divide mixture evenly among cupcake liners and place crackles in the fridge until firm.
