INGREDIENTS:

  • Muffin Mix
  • 2/3 cup vegetable oil (or sunflower oil)
  • 3 flax eggs (3 tbs flax seeds in 5 tbs water, can use chia seeds instead)
  • 2 cups self-raising flour
  • 1 tsp cornflour
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 cup pear puree (ripe soft pears, peeled and blitzed in a food processor until smooth)
  • 2/3 cup pears (0.5cm diced)
  • Crumble Topping
  • 1/3 cup desiccated coconut
  • 1/3 cup plain flour (or oat flour)
  • 1-2 tbs vegan butter (softened)
  • 1/3 cup rolled oats (or rolled barley)
  • 1/4 tsp vanilla extract
INSTRUCTIONS:
Muffin Mix
  1. Preheat an oven to 180C and line a standard muffin tin with 12 muffin liners (or a jumbo muffin tin with 6 liners).
  2. Mix all muffin ingredients together until smooth and combined.
  3. Divide evenly among muffin cases, then top with each muffin crumble mix. Bake for about 25-30 minutes or until the tops are a golden brown and spring back slightly when pressed.
  4. Allow muffins to cool on a wire rack.
Crumble Topping
  1. Stir all ingredients together until smooth (start with 1 tbs of non-dairy vegan butter, you may need 2 tbs if you want a chunkier crumble).
