This recipe is contains no added sugar and natural dietry fibre. Great for kids lunchboxes or a work snack. Double or triple the recipe to utilise empty space in your oven and make more if you wish.

INGREDIENTS:

  • 300 g fresh peach (stone removed, halved)
  • 300 g fresh mango (peeled, cubed)
INSTRUCTIONS:
  1. Preheat an oven to very low 80C (or 60 fan forced). You can dehrydrate on a raw setting 40C and below, if you wish. Just remember, drying times will take longer.
  2. Line a baking tray with a silpat sheet or baking paper to give you thicker roll-up textures (line a smaller baking tray for thicker, roll-ups / or line a large baking tray for thinner, fruit jerky/leathers).
  3. Place fruits in a saucepan and stir over a medium-high heat, until fruit has completely broken down and softened (mushy-looking).
  4. Blend mixture and pass through a fine sieve (or mash mixture through the finest setting on a food mill)
  5. Spread mixture evenly onto the tray and leave to dehydrate for 6-8 hours. Cut with clean kitchen scissors to separate straps.
