Because these granola bars contain barley and malt extract they are not considered gluten-free. There is only a small amount of rice malt syrup in this recipe.

INGREDIENTS:

  • 1 cup rolled barley
  • 1 cup puffed quinoa
  • 1/2 cup hazlenuts (chopped - and roasted if you wish)
  • 1/2 cup almonds (chopped - and roasted if you wish)
  • 1/4-1/3 cup rice malt syrup (adjust for sweetness)
  • 2 tbs malt extract
  • 2 1/2 tbs cocoa powder (or raw cacao powder)
  • 1/4 cup cacao butter (chopped)
INSTRUCTIONS:
  1. Line a small brownie tin with baking paper (extending up the sides of the tin)
  2. Mix the rolled barley, puffed grains and raw nuts together in a bowl
  3. In a small non-stick saucepan over a low heat, mix together the rice malt syrup, malt extract, cacao powder (or cocoa powder) and cacao butter until completely dissolved and melted.
  4. Pour the melted mixture into the grain and nut mixture and quickly stir to combine (mixture will firm up quite a lot).
  5. Press this mixture into the brownie tin and refrigerate for an 1 hour (minimum).
