INGREDIENTS:

  • 1 cup hazlenut butter
  • 1/3 cup hazelnut meal
  • 1/4 cup coconut flour
  • 2 tbs dutch cocoa powder
  • 2 tbs flax meal (mixed with 8 tbs water)
  • 1 tsp baking powder
  • 1/4 cup dark brown sugar (or any sugar, date palm sugar, molasses sugar etc)
  • 2 tbs vegan milk chocolate baking chips (finely chopped - plus a couple extra for pressing onto the tops)
  • 2 tbs vegan dark chocolate, extra (melted, for drizzling)
INSTRUCTIONS:
  1. Preheat an oven to 180C and line a large cookie tray with a silpat sheet or non-stick baking paper.
  2. Combine all ingredients together then roll (or drop) about 1 tbs of the cookie dough 1cm apart on the cookie tray (pressing the balls down slightly). Press in with a couple chocolate baking chips.
  3. Bake for 10-12 minutes and allow to cool completely on the trays before removing with a spatula (cookies will be soft).
  4. When cooled, drizzle with extra melted chocolate.
