In a food processor, blitz the cashews and biscuits until very fine (like a cashew flour/meal).
Add the remaining ingredients to a saucepan and melt over a low heat together. Combine melted mix and cashew-biscuit powder to a bowl and stir to combine a dough. Refridgerate mix for a couple of minutes (or until firm enough to roll).
Roll into tablespoon-sized balls and refridgerate for at least 1 hour to firm.
