INGREDIENTS:

  • 1/2 cup raw cashews
  • 1/2 cup gluten-free plain biscuits
  • 3 tbs lemon zest (finely grated)
  • 2 tbs rice malt syrup
  • 2 tbs cacao butter
INSTRUCTIONS:
  1. In a food processor, blitz the cashews and biscuits until very fine (like a cashew flour/meal).
  2. Add the remaining ingredients to a saucepan and melt over a low heat together. Combine melted mix and cashew-biscuit powder to a bowl and stir to combine a dough. Refridgerate mix for a couple of minutes (or until firm enough to roll).
  3. Roll into tablespoon-sized balls and refridgerate for at least 1 hour to firm.
