INGREDIENTS:

  • Porridge
  • 2 cups uncontaminated oats (for a gluten-free option)
  • 3 cups almond & coconut milk
  • 3 tbs rice malt syrup
  • large pinch mixed spice
  • Roasted Blackberries
  • 125 g fresh blackberries
  • 1/2 tsp orange rind
  • 2 tbs elderflower syrup (or elderflower concentrate)
  • tiny pinch mixed spice
INSTRUCTIONS:
  1. Heat an oven to 180C and line a small baking tray with baking paper.
  2. Toss ingredients from the Roasted Blackberries together and place on a tray (with any excess juices)
  3. Roast for 15 minutes or until very soft.
  4. Place all Porridge ingredients in a small non-stick saucepan and cook, stirring constantly over a medium heat until the porridge is thick and milk has been absorbed by the oats.
  5. Serve porridge hot topped with the Roasted Blackberries and any excess syrup.
