Bircher Pancakes [Vegan, Gluten-Free & No Added Sugar]

Based on the popular Bircher muesli (without the dried fruit)

1largegreen apple(or pears - grated - I finely grated mine so it was like mush)
3/4cupunsweetened non-dairy milk
1/4tspbi carb (baking) soda
vegan butter(for the pan)
Place the grated green apple, non-dairy milk, rice malt syrup, lemon juice, vanilla extract and chia seeds in a jug together and stir to combine.
In a medium bowl mix together the oat flour, baking powder, bi carb soda and cinnamon.
Making a well in the centre, pour the wet mix into the dry oat mix.
Heat a non-stick frypan with a bit of vegan butter and a tiny amount of coconut oil on a medium heat.
Place heaped tablespoons of the batter in the frypan and smooth out batter to small pancake circles about 1/2cm thick. Carefully check the pancakes are light golden on the underside after about 30-seconds of cooking (may need a minute each side) then carefully flip the pancakes over cooking for about another 30 seconds (or until the underside is lighty coloured once lifted). Repeat with remaining batter.
Serve hot topped with fresh fruits, seeds, nuts and yoghurt.
