INGREDIENTS:

  • 2 2/3 cups vegan white chocolate (roughly chopped)
  • 1 1/2 tbs coconut oil
  • 2/3 cup crushed peanuts
  • 2/3 cup dark chocolate chips (or chopped dark chocolate)
  • 1/4 cup rainbow sprinkles
  • 2/3 cup vegan vanilla marshmallows
  • 2/3 cup dried strawberries
  • 1/2 cup glace cherries (halved)
  • 2/3 cup vegan waffle cones (crushed - most store bought are vegan)
  • few drops banana-flavouring oil (from Lorann oils, Roberts Confectionary, or online)
INSTRUCTIONS:
  1. Line a small brownie tin with baking paper (extending up the sides of the tin).
  2. Melt the coconut oil, vegan white chocolate and banana-flavouring oil in a heatproof bowl in microwave busts (stirring in between until smooth).
  3. Place all the other ingredients in a bowl and stir in chocolate to combine.
  4. Push rocky road into a tin and refridgerate a minimum of an hour before cutting with a sharp knife.
