The dates in this recipe give a lovely caramel flavour.


  • Crumble
  • 1 cup walnuts (roughly chopped)
  • 1 cup cereal grains (I used rolled barley and rolled oats)
  • 1/4 cup raw sugar/brown sugar (or any unrefined sugar/liquid sweetener you like )
  • 1/4 cup unsalted vegan butter (or any oil or spread you like, melted)
  • Fruit
  • 4 cups apples (peeled and chopped)
  • 1 1/2 cup medjool dates, pitted (soaked in water for 30 minutes)
  • 1 tbs lemon juice
  • tiny pinch salt
  1. Preheat an oven to 160C (180C Fan forced) and grease six 1-cup ramekins and place on an oven tray.
  2. Mix all crumble ingredients together in a bowl.
  3. Drain the dates and blend with the lemon juice and salt until smooth
  4. Par cook the apple in boiling water until just soft. Mix apple with date paste and divide among 6 ramekins.
  5. Divide crumble mixture over ramekin
  6. Cook crumble for 15-20 minutes or until the crumble topping is golden brown. Serve with low-sugar (greek/plain natural) yoghurt.

*If you are using sour or tart fruit, you may want to cook to taste with a small amount of additional added sweetner (like honey).
